    Just keep going with the clear and intermittent wet sand with 1200 till your happy. It's usually 3 times as many as you planned if not a lot more, my current build has 60 coats of Tru oil on the top, about 50 and sealer on the back and sides.

    As to your heel, you can add a cap and taper it smooth. Nice bit of burl would set it off nicely.
    My PRS build has a similar heel, I've just inlayed it with M.O.P.
    P.S
    With veneer tops, I never sand before I have stain and clear or Tru oil on. Other than a very light dry sand with 600 prior to stain but only if it needs it and with only enough pressure to move the paper.
    Also when doing a vintage burst a bottle of alcohol and clean rags to work the fade is the trick!
