Between the input and output tab connections on the pot, max volume is with 0 ohms resistance, so the signal just goes directly from input to output. Minimum volume is with 250k between the input and output, and the output is 0 ohms to the pot's ground tab.
Looking down on the back of the pot, with the three connection tabs at the bottom, your ground connection will be the one on the left, the output in the middle and the input on the right. For a right-handed guitar the two outer connections are reversed.
For the tone pots, you'll connect between the centre and left-hand tabs to provide your variable resistance. Full bright tone is with 250k resistance, maximum treble roll-off is with 0 ohms resistance (so the signal goes straight to the tone cap with no attenuation).
