With Dingotone [ I've watched the vid's ] if you just wanted a hint of colour, for the kit to look old say can you put on the first bottle stain coat maybe 1 coat and then go to bottle 3 the finish coat rather than bottle 2?

Yep.
You can also just use the intensifyer rather than the stain to lessen the effect.
