General rule of thumb is roughly an inch per year for drying time is what I've been told. There is plenty of info on the internet about how to store drying timber. Things like stacking, sealing the ends etc.
Kiln drying obviously is a much quicker process although I'm sure there are cons to doing that compared to air drying.
