Did an epoxy top similar and ended up with a bit of a reverse meniscus on the taped edges that needed to be filed flatter which
wasn't fun in the centre of the guitar.
I used a piece of 100 x 400 x20mm piece of flat pine and full sheet of 600 wet and dry to bring down to the main level in one hit and then move up normally to get fully flat. Took awhile but comes up a good result

Epoxy resin it's a little bit tricky but, most of the time it's worth the effort. The sense of depth is unique, it will bring life whatever the wood that you aplly.
