Hi mate, 2000 can cut more than what most folks realise, just need to check your work after every 2-3 sweeps and then rinse off the paper for the next couple of passes over the build. Very light touch with lots of lubricant (water) is all that you need and once it feels glassy smooth time to move onto micro mesh pads and repeat this process as you move on up through the finer grades to 12,000 grit.

If you have already taken too much off that could be due to last few coats not being left long enough to cure or a more vigorous sanding action with minimal water. Either way you may need to add back some more top coats to help bring home that shiny finish you are chasing.

Cheers, Waz
