I am thinking of just using True Oil. Will this finish suit this guitar?

It’s easy to start a new Build Diary thread, but you need to find the right bit of the forum. This depends on how you view the forum. I have my forum link set to open to the full forum display, rather than latest posts. You should get indications of unread posts from there, and it gives a good overview.
This link should take you to the My Build Diary forum. Just click on the ‘+ Post New Reply’ box at the top and there you go.

There’s a ‘Forum Actions’ section on one of the toolbars at the top of the page and you might find the ‘mark forums read’ option useful to start with unless you plan to read every single post.
Yes, TruOil will suit the guitar. I’d wait until it arrives before you make a firm decision just in case there are some awkward grain patterns that might be better hidden with a solid colour or at least a sunburst. But from seeing similar kits built, you should be fine.

To start your diary: click "The Forum" tab at the top of page, click on "My Build Diary", and then click the button "+ Post New Thread".
As far as the GR-1SF is concerned, the body is basswood, so Tru-oil will work and give a very light amber tint.
I did a TL-1TB a while ago and finished the maple neck and basswood top of the body with Tru-oil only. This will give you an idea of how it should look. The link to this build is in my signature.
