I was just wondering whats the best way to finish the headstock. Do most people use a veneer or do they paint with black gloss paint. If you paint with black how do you hide the grain?

If you want to hide the grain, you'll need to use a grain filler or sanding sealer to give you a flat surface to work from.
Veneers will work, but they also can have their own Grain which can still show through. There are some plastic type veneers and headplates you can buy online, but it may be easier just to go with the grain filler/Sanding sealer.

A black vinyl sticker would also work with covering headstock and hiding the grain.
Personally i prefer to show off any decent grain rather than aim for a traditional look.
