Hi, I know there's the Squier Bass VI, but it'd be good to have some options for baritone guitars (EADGBE basses)

It would just need a few hardware changes to fit thicker bass strings.
So tempting, after 40+ years I still miss my VI rather badly
I'm about to convert a cheap 27" scale bass that was given to me to a bari
The only trouble with the JZ-1 kit is that it's using a non-baritone scratchplate (re-purposed from another kit) rather than a scratchplate purpose designed for the kit, so the bridge and middle pickups are further towards the neck/further away from the bridge than they should be. Less of an issue for a bass than for a guitar IMO, but it does take something away from the full Bass VI vibe. But you could always increase the pickup rout size and make your own pickguard if you felt up to it and had the tools.
Might be better off modding a 5 string bass kit with an extra tuner hole, a new nut blank and some creativity with a bridge.
On my JZ-1 kit I ended up carving out a larger cavity for a wider pickup spread and customised a new pickguard from.a pearloid blank.
It can be done, but I'd counsel doing a lit of planning prior to breaking out the chisels.
