1st practice has given me some confidence. The paper isn’t dead flat so it looks more wobbly than it is.
The lazy Susan idea was a great one, it’s really quite easy to keep a consistent distance when the guitar spins freely

I took the plunge and had a go at a burst!
It’s not perfect but I think it’s much better than the imperfections it hides! I think I’m happy I took the risk...

You might want to think about doing a bit more bursting round the neck join once it's glued in. That means you can fill any gaps around the joint and spray over in black for a seamless look.

Yeah I’ll bear that in mind about the join. Bursting seems like a good way to cover up all sorts of stuff ups!

It certainly is a daunting task, however just ensure all your measurements are right before glueing. There are heaps of threads on here with advice for setting a neck, so grab a few cups of coffee and have a good read on what to measure and what to look out for prior to doing so.
