It's a good question and one that I did consider and am aware of. In fact when I took the LP round to Adam he also commented.
However, I'm not entirely sure that there is a right or wrong way. Certainly there is a standard way.
I originally installed the pickups in the standard way but felt uncomfortable with how close the pickups were to the strings, yet it worked far better if the humbuckers were reversed inside the surrounds. I think one of the pictures with the lighting makes it look way more 'out' than it really is.
I jumped on the net at the time to check it out and saw examples such as these below. The first two (same guitar)on seems to graduates from it's thinnest at the neck to the fattest at the bridge.
In the third and fourth picture, the surrounds both appear to slope downwards towards the bridge, like mine.
So I don't really know. I just fitted them in the way that seemed to keep the pickups as parralel to the strings as possible?
