Hi Scott, my original strat copy had a mitey mite scratch plate fitted with 3 x mini on-off-on switches for the blade style bill Lawrence 4 conductor pickups that were fitted and it did exactly what you mentioned above.

You could have all three on together, neck & bridge, plus the usual 5 position switch combinations plus muck around with the in & out of phase sounds across those PUP's. Sadly it was left behind at a gig on Gold Coast in 1985 and really wish I still had it today as it was that good and extremely versatile through all the sounds you could achieve.
