I also find the wiring up of pickups intimidating, but am ripping the band aid off of that with my next projects.

Changing pickups down the road is a simple enough task by comparison to the initial building. At least with the stock pickups you can play the guitar and tweak this & that whilst it settles in to being more than a pile of parts.My only regret is not having to confidence to wire up some better pickups on the first go.
If you iron out any playing issues along the way, dropping in a better set pickups will likely be all you'll need to do.
(apart from rocking the F out!!!)
