Yes I would be very careful with the 800 grit as the TO goes on very light coats so you will remove a lot of it if you go to much with 800... I use the 1200 grit paper to rub in Tru Oil because it pushed and works it into the grain while also continually smoothing the surface. I got the idea from crimson guitars... he uses that technique to apply his finishing oil, which is very similar to Tru Oil.
