One guy that I saw interviewed said he started building a particular style of guitar that was based on an old Martin design, and that is all he does. When he started, he would spend about 100hrs on each guitar. Now that he's been doing it for so long, he was asked what kind of time it is taking him now, his answer was approx 250hrs!!
Some of these guys have specialists that they bring in for certain aspects of the job. They may use jewelers for the intricate inlays, but they will also ship the guitar off to be finished by someone else. Someone who specialises in getting that perfect glassy finish, or a super thin lacquered coating. This process as you know from the electric guitars can take months, but that's all he does!
