I quite like the look of the Menthol, but seeing as you already have a guitar in that colour the Golden Yellow would look outstanding. I didn't see the Vanilla option on there
I agree with Kick, that headstock shape is nice and classy. As for getting it symmetrical, if you have a router and a flush cut bit you can always 'trace' one side of the headstock on a scrap piece...

I built an LP-1SS last year and may have had the same issue... just not as big of a gap as you. Does the binding on the treble side of the body sit higher than the wood at the neck...
