Jay - sorry for your loss. As for sanding off the veneer - sometimes, you're left with few options. Ultimately if the guitar comes out how you want it to look, that's the main thing.
Since I have a Facebook page dedicated to this build I keep forgetting to update this... Will put a few pics up shortly. The veneer is all gone. It's pink now! Really pink! I had a bit of a mishap and put a run in my paintwork. Oops! Sanded it back and now it all ready for redoing one or two more coats and then redoing the flames. This time in fluro!

The veneer is sanded back, the front is sprayed in pink...
With FLURO flames! I think it looks awesome (if I may say so myself). I sanded through some spots on the back (oops) and those are repaired as well. Need to put some silver on the back so the repairs match up and then I can get it back to my clearcoat guy.
