The shellac idea is a good one as it pretty much plays nice with any top coat. Not sure about water based stuff though.
Just remember that all a shellac has slight amber hue to it (to varying degrees as well as varying colours - blonde, orange etc).
I've used shellac on necks under satin poly just to get that slight amber tint. I'm a big fan of shellac for lots of uses.
