I can't see how Tung Oil could be on the bad list as it's made from pure natural Tung trees.
My understanding is that all coatings Synthetic are frowned upon. Although I always thought Nitrocellulose was made from pure natural cellulose(cotton) soaked in pure natural Nitric Acid(concentrated rain water).
If there is any bitch about Tung Oil I would expect it would be when they add a bit of Polyurethane to make it glossy.

The Neck. I have been putting a lot of effort and thought into this
The body is walnut, and I have done the heal in walnut as well. I've actually done it twice as I wasn't happy the first time around as there was too much exposed unfilled grain.
Anyhow, what I envisage is to have the heal walnut, and the back of the headstock in wanut as well with the back of the neck effectively natural colour. with the face of the headstock either Walnut or Black(my pref is Black)

I've walnutted the back of the neck. and relicked the back of the neck so that the back of the fretboard area is still maple.
I intend to try and Amber this a little I've started this by using soem wudtone aged gloss, but may switch to good old shellac to get that old warm Amber look to it. Certainly the Maple and the walnut contrast too far, so I want to soften that a bit.
I've deliberately left the colour taper long at the headstock end as I want to hide the scarffed neck joint.
I still have to make a decision on the face of the headstock. whether to do it Black or just amber it down.
I'd like to put some pearloid gothic decals on it and it might look a bit pale agains the Ambered maple

Looking really good Kells ... its turned into a serious departure from your originally planned white but the way you're working that colour is choice! (just how I'd imagine a "Gretsch New Yorker" would look like - if such an animal existed!)
What are you going to finish it in? ... I reckon when you get to that point this baby's going to be crying out for a nice "aged yellow" clear coat finish to set-off the antique look of the colour.

At the moment I have been smearing a mixture of Lac bug and ethanol all over the neck and it is starting to get that nice aged amber affect on the exposed maple areas. With the body I'll probably put a few more coats of Tung oil into it before I look at glossing it up a bit.
I had a trail fit of the pickups yesterday and the rebate for the bridge pick up is too small to fit the screw tabs through.
I've ordered the headstock decals from Jojo in Japan, I've gone for an aged white pearl Gothic torch similar to the pic a few comments back.
I am looking to get a fish eye truss rod cover with my name on it, but atm it's about $30 to get one through fleaceBay.

I'm pretty happy with the headstock. the shellac has given it that aged light Amber look.
The back of the neck still has a little way to go, but is comming up nicely. I've had to deal with a few thin areas of the brown comming off and missed a couple of over runs of the shellac, but this stuff is so forgiving, it just rubs back with some metho

Just been out in the shed about to start doin some glossing, and found the laminate around the edge of the neck slot is cracking and lifting. I have no idea why this would lift.
I've rubbed in some Tite-bond, and sanded it back and started re-colouring it.
I am now thinking whether or not I should bind it. But then I probably won't get a good match on the binding colour, as well as the need to get a binding(purfling cutter) knife as the binding jig/s on my Dremel won't get into the corners.
Anything to do with the air temp in the shed? I move my builds out during the day as the temp soars considerably.

It never stays in the shed. All my kits get ferried back inside the house when work is done.
It's probably more to do with the air temp in Vic as a whole, it's been a bit up and down this year.
I did leave it out there for a few hours the other day while I let the wipeon Poly cure. So maybe that's when it happened.
