With the strings being reversed, I think you'll find it won't sound as full as the way it's been designed, as the skinny string will be hiding behind the thicker string, and won't get much of a strum. I just tried it out on my ES-12G, and the up-pick hasn't got as nice a sound as the down-pick.
With the bridge posts, once they're in, I'd hate to try get them out without damaging the top. You can check string alignment early on, but you can't check the neck angle until you've finished the body and then you can insert the bridge posts.
Regarding the reversed strings, it's my wife's call. She had a Ibanez 12 string 25 years ago strung that way and she loved it. Our son took that guitar to too many gigs and destroyed it. She's longing for that sound again, if she finds it it's a win, if not it's a new nut.
With the bridge posts ... I figured out I can put a small steel foot in the bottom of each hole, fit the posts to check the neck then use a long bolt as an extractor to remove the post. Straight in and straight out, no lateral pushing and pulling. If when fitting the second and final time I'm not happy with the tightness I can put a smear of glue in but I don't think it will happen. I'm still looking for comment as I haven't committed myself yet.
Edit ... Now committed, posts fitted.

With the bridge fitted and the neck clamped in place the outer strings look nice and even with the edge of the neck running up to the nut, happy with that aspect of test fitting.
Straight edge on the frets with truss rod loose reveals top (nut end) of neck curved back. When strings are fitted is the neck likely to straighten or do I have a problem?
Struggling to figure out why reversing string order would be of any benefit when most 12 strings are set up thin then thick? It is not as if there is much room between each to allow for any individual picking and the main part of their signature sound is created by the way they are strung. For a lady who may have small hands and fingers she may find the thinner strings could buzz more if the order is reversed. Suggest playing a few 12 string guitars before making a final decision.
The answer I suspect only she and George Harrison knows and George isn't talking ;).
Actually she just said she likes the strong bass tone backed up by the higher octave.
She's been playing for 49 years, I'm a learner so I just nod and say "Yes dear".
Just looking up on the wall, this is some of her stuff including a 12 string Maton, so it isn't new to her.
