Undercoat is a good idea if you want a nice smooth finish. You still need to use a clear coat, this will prevent scratching though your paint layers. Matte clear is pretty easy to come by, I use matte polyurethane spray on my necks and it works a treat. If you use a matte clear coat it will all end up with the flat finish you are after.
