That's an interesting article... and I've heard of body grounding issues before. The odd thing in this case though, is that I'm only getting the buzz on the one guitar. I tested my other electric guitars yesterday, using the exact same cable and amp, and I don't get buzz on any of them. That's six electric guitars spanning single coil, humbucker and P90 pickups. The only buzz I get is from the one that I built... which leads me to believe that I've got a wiring issue.
The cavities are lined with copper foil, so I don't think it's a shielding issue.
I did note though, that when I turn the tones pots down, then the buzz goes away. So there might be something to the capacitor theory yet. I think I'll start with checking the capacitors (make sure they're giving the right readings). If they check out, then I'll rewire those pots. But that's all a job for next weekend now :)
