There are a few ways to do this.
Easiest is to glue the rings in place.
Second way is to counter bore the screw holes and then use a plug cut from the same material.
Or you can get really funky and use rare earth magnets :)
Screw from the back?
This is the Danelectro solution. Danos with the lipstick pickups are front mounted, but the adjustment screws are on the back of the guitar.

Oh yeah, forgot all about the Danos with rear height adjust pups..
I thought about the screw from the back approach. At one point I thought I'd have to put a hole in the back anyway. Since I figured out how not to do that I am reluctant to do that.
I am intrigued with the magnet approach. I have seen it used on backside control covers. Would using them so close to the pickup covers cause a problem with the magnetic fields?

Yes they would create havoc with the pickups.
